Confit in Olive Oil
Confit is the action of cooking a food in hot fat (vegetable oils, duck fat, lard, clarified butter, etc.) with the container covered to achieve cooking without browning. Our team of chefs carry out this process so that restaurants only have to easily re-generate the product in the oven or in a pan with the chosen accompaniment. This cooking process together with the subsequent deep-freezing allows us to offer a completely natural product, without any additives or detriment to flavor or texture.
Vacuum Cook Sous Vide
Sous-vide is a cooking method that maintains the integrity of food by heating it for long periods at relatively low temperatures inside a plastic cooking vacuum bag. The food is cooked for a long time, sometimes more than 24 hours. In this technique, when removing, it partially removes the air, the lack of oxygen prevents the prolifera-tion of microbes when the product is subjected to certain temperatures for a certain period of time, so the product is fully pasteurized.
